Butter Pecan ice cream coffee

It was trash day and between yesterday and today, I filled three large trash bins with plant pruning/trimming/hacking. As a reward, I made myself an iced coffee and put a couple of scoops of Butter Pecan ice cream in it. VERY, VERY delicious! Mom and I gobbled it right down so I made a second batch. Just as delicious but now I'm wired--even though it's six hours later. I think I'll make decaf tomorrow.

I bought some of Coffee Bean's coffee extract (horrendously expensive) and have been on an iced coffee kick - yum! But I must either find a cheaper source of coffee extract or buy a cold brew coffee maker if I'm going to keep this up all summer.

I'm such a hick. I just brew it up, let it cool down to room temperature and throw it and some ice in the blender. *g*

But don't you have to brew it stronger/thicker than regular coffee? I've tried making it with my regular brewed coffee and wasn't impressed. I know the typical iced coffee seems to be made with a concentrated extract. And I'm taking for granted that it's 50% milk, 50% coffee ;-)

I brew it the usual way and add enough half and half to give it the right color. I suppose it's weaker but I don't mind. It's cold and tasty and has zing. *g*
